Mimi's Tortillas

✦   Use grass-fed, organic, and/or locally sourced ingredients whenever you can. That's the Nana way.

Ingredients

  • 2 tablespoons Salt
  • 1 tablespoon Baking powder
  • 3 cups Non-bleached flour
  • 3 tbsp Ghee
  • ⅔ cup Warm water
Ghee Note Ghee gives the best smoothness and texture. You can also try grass-fed butter, tallow, or organic EVOO — each brings something a little different.
You'll also need A hot non-stick skillet and a rolling pin.

Instructions

  1. Combine salt and baking powder in a bowl. Mix until it feels grainy and light.
  2. Add ghee and work it in with your fingertips until the texture turns crumbly. Pinch a small clump — it should hold together when pressed.
  3. Add the warm water gradually — not all at once. Mix after each addition until a dough forms. It should not be sticky.
  4. Turn out onto a floured surface and knead for a few minutes until smooth.
  5. Pinch small balls of dough (about 1.5 inches) and place on a floured surface. Let rest for 10 minutes.
  6. Heat your skillet. It's ready when a sprinkle of water forms little dancing beads across the surface.
  7. Lightly flour your surface and rolling pin. Roll each ball out, starting away from you then turning the dough to form a circle.
  8. Place the rolled dough gently on the hot skillet. Cook about 1 minute per side. It may bubble — that's perfectly fine.
